Dressing Ingredients:
2 Table spoons cider vinegar 1 Tsp finely chopped fresh garlic 1 Tsp veggie oil or olive oil 1/2 Tsp hot pepper sauce 1/2 Tsp sugar 1/4 Tsp salt Prep time 15 minutes Chill time 1 hr
Salad Ingredients
4 Cups coarsely chopped tomatoes 1/2 cup chopped fresh parsley 1/2 cup chopped fresh cilantro 1 15 ounce can blackeyed pea drained 1 4 ounce jar of diced pimentos 2 ounce 1/2 cup land o lakes monterey jack cheese cubes 1/4 inch lettuce leaves Combine all dressings ingredients in a jar with tight fitting lid shake well. Combine dressing and salad ingredients except lettuce in a large bowl mix well and refrigerate for 1 hr. To serve place lettuce leaf on plate then top with 1 cup salad mix and enjoy with a nice glass of lemonade. Bon appetit!!!!!
